The Aeneid Batch 1

It's been a journey starting a craft distillery in a pandemic, and our first release, the Odyssey was named in that honour. We were working on a second Italian themed recipe from the start, and we loved the flavour profile, but it took twice as long to come together in cask. So, 'The Aeneid' might be a bit late to the party, but it's certainly fasionably so.

Leaning into a more italian flavour profile this time, 'The Aeneid' displays lifted orange, mandarin and thyme aromatics under-cut by a bold fennel finish, rested for 6 months in ex-whisky French oak for added texture and complexity. Definitely one for the liquorice lovers.

Polemic x Soi 38 Batch 2

Featuring the core Polemic botanicals with the addition of a bunch of market fresh Thai inspired ingredients. Bold aromatics of ginger, galangal, turmeric, basil, mint, coriander, kaffir leaf and lemongrass are finished with a touch of Soi 38's house pandan extract.

Brandy

Misery Loves Company

While we've been playing around with barrels for a while with our core gin range, this little distilling odyssey was always going to take us deeper into the world of barrel matured spirits. Having trained originally as a winemaker, brandy products were always particularly interesting and a natural fit for the next step on our journey. So, after many years patiently watching barrels, here we are, with our first release.

"Misery Loves Company" is a 5 year old, single cask, non-chill filtered, independent bottling of Tarac Distillings brandy spirit. Extra aged for 3 years in ex-Starward whisky casks. Bottled at 46.5%, the nose is rich with dark berries and dried figs, while the palate remains fresh and linear for a brandy of this age with citrus and floral notes.

Whisky was the hook that got me into the distilling game and I was always going to make some of my own sooner or later. Polemic as a brand has always been about experimentation but it's informed more by my foundations in the world of wine than by my time making whisky for other companies.
 

With a move on the horizon to where my roots are, Port Adelaide (which was originally and affectionately known as Port Misery), we'll be bringing our experimental and idiosyncratic approach to the world of Australian whisky.
